Yeast-Free Creamy Zoodle Pasta Salad Recipe

Ingredients:

4 organic zucchini squash

¼ cups grated Parmesan

1 small jar artichoke hearts

1 large red bell pepper

1-2 tablespoons plain or roasted garlic hummus

1 tsp Italian seasoning

10-20 green or black olives

Salt and pepper to taste

Directions:

  1. Wash zucchini and make zucchini noodles. Put into a medium mixing bowl.
  2. Grate Parmesan and add to noodle bowl.
  3. Dice red bell peppers and olives. Add to bowl.
  4. Add artichoke hearts.
  5. Add hummus, Italian seasoning and salt/pepper to taste.
  6. Mix well and cover.
  7. Let sit overnight in fridge for optimal flavors.
