Labor Day is just around the corner. If you are on the Yeast-Free Eating Plan, you may be wondering what you will actually be able to eat during the holiday weekend. Great food is what it’s all about, right? You will be excited to know that you do not have to sacrifice flavor while eating yeast-free. We have just the thing! Yeast-Free Pulled Pork Wraps are super healthy and holiday-delicious. It’s almost too good to be true! 

Yeast-Free Pulled Pork Wraps

Ingredients:

1 tsp coconut oil

1 (4 pound) organic pork shoulder roast                                              

1 cup keto barbecue sauce

1/2 cup organic apple cider vinegar

1/2 cup organic chicken broth

1/4 cup Sweet-N-Natural

1 tablespoon organic yellow mustard

1 tablespoon Worcestershire sauce

1 tablespoon chili powder

1 extra large onion, chopped

2 large cloves garlic, crushed

1 1/2 teaspoons dried thyme 

1-2 heads green leaf lettuce or butter lettuce

Directions:

Put oil into crock pot first, and then place the pork roast in, on top of the oil. Add in the remaining ingredients and mix well. When you put the spices in, sprinkle over the top of the pork and rub the pork with your fingertips to work it in (wash hands well!). Set the slow cooker to 6 hours on high and cover. Check the pork roast at 5 hours, because it could be done by then, but most pork shoulder roasts will take 6 hours. When the roast is falling off the bone, use a fork to pull the pork. Let the pulled pork sit in juices for 10-15 minutes for best flavor. 

Wash and dry lettuce and then peel off large pieces for wraps. Spoon pulled pork into lettuce leaves (1-2 tablespoons per taco), and if desired, serve with a side of black beans. A cold fresh vegetable will also go well as a side dish, like sliced cucumbers or sliced tomatoes. If you want to get fancy, go for the Yeast Free Italian Bread. For dessert, try the Yeast-Free Chocolate Chip Cookies. Oh, SO good!
