Grilled Pesto Shrimp Skewers

Ingredients:

  • 1lb shrimp, peeled and deveined
  • 1/2 cup of basil
  • 1 Tbsp. pine nuts, toasted
  • 1 small clove garlic, minced
  • 2 tsp cococut oil, liquified
  • 1 Tbsp. freshly squeezed lemon juice
  • salt and pepper to taste

Instructions:

  1. To make pesto, in a food processor or blender, pulse basil, pinenuts, garlic, coconut oil, lemon juice, salt and pepper until smooth.
  2. Allow shrimp to soak in pesto for at least 30 minutes to an hour, in the fridge.
  3. Skewer the shrimp and grill on medium-high heat for 2-3 minutes on each side, until cooked.
  4. Serve with your favorite grilled veggies & Enjoy!
