Hotze Vitamins is 25 years old! To celebrate 25 wonderful years of health and happiness (thanks to YOU!), we decided to give YOU another completely delicious Yeast-Free recipe, Yeast-Free Coffee Cake! Coffee cake can be eaten for dessert or for breakfast, and it doesn’t even have to be your birthday! Breakfast is one of the hardest meals on the Yeast-Free eating program, so we thought this recipe is perfect. Enjoy it with coffee or tea at any time of day. It provides a good amount of protein, fiber, omega 3 fatty acids, and healthy fats for a healthy start, or end, to your day.

¾ cup coconut flour

¾ cup almond flour

2 teaspoons aluminum-free baking powder

1/4 teaspoon salt

4 organic eggs

1/3 cup Sweet-N-Natural

1 tablespoon water

½ cup unsweet almond milk

¼ cup melted Coconut Oil plus 1 tablespoon unmelted

1 cup chopped pecans

2 teaspoons ground cinnamon

a pinch of sea salt

¼ cup melted organic butter

2 tablespoons Sweet-N-Natural

10 drops liquid stevia

For the pecan crumble topping, combine the small chopped pecans, cinnamon, salt, butter, liquid stevia and Sweet-N-Natural.

For the cake:

  1. Preheat oven to 375 degrees and grease an 8 x 8 baking dish.
  2. In a medium bowl, mix together the coconut flour, almond flour, baking powder and salt.
  3. In a separate bowl, whisk together the eggs, Sweet-N-Natural, water, almond milk, and coconut oil. Pour the wet mixture into the bowl with the flour mixture and mix until smooth. Batter will be thick.
  4. Pour half of the batter into the baking dish and spread evenly. Spread half of the pecan crumble mixture over the batter. Repeat for the remaining cake batter and crumble. Bake on center rack for 25-30 minutes until a toothpick comes out clean from the center.
  5. Allow cake to sit 20 minutes to set and cook before cutting to serve. Serve with Dr. Hotze’s Transformational Blend Coffee for an extra special treat.

Note: This recipe is best for after the first two weeks of being on the Yeast-Free eating program since it has coconut flour.
