Who doesn't love cauliflower? Okay, it may not be for everyone, but if you're a fan, you're really going to love this new recipe. It's quick and easy, perfect for those hot summer nights and puts a simple spin on an already delicious vegetable.

Not to mention, cauliflower is rich in antioxidants, B vitamins, fiber, folic acid and the compound known as DIM, which may help ease symptoms of PMS, perimenopause and prostate issues.

And the best part? This recipe is completely yeast-free! (Just be sure to use a moderate amount of Parmesan.)

Parmesan Roasted Cauliflower


  • 1 head cauliflower, florets sliced horizontally
  • 2 T butter, liquefied
  • 1 T coconut oil, liquefied
  • Pinch of sea salt and pepper
  • 1/4 C grated Parmesan cheese



  1. Preheat oven to 400 degrees.
  2. In a large mixing bowl, toss cauliflower in butter and olive oil. Season with salt and pepper.
  3. Spread cauliflower onto a baking sheet, evenly in a single layer. Roast for 20-30 minutes.
  4. Remove from oven and sprinkle Parmesan cheese on top of cauliflower. Roast for another 5 minutes, or until the cheese melts and becomes slightly crispy.
  5. Remove from oven and serve immediately.
