Spaghetti squash is so versatile, incredibly delicious, as well as nutritious. If you're looking for a simple and easy new recipe, this is one the entire family will enjoy. Yes, even the kids! 

The best part about this recipe is that you really can't mess it up. Go for a Margherita-style pizza and add all types of veggies, or stick with just cheese and pepperoni. Whatever you prefer, go for it!

Pepperoni Spaghetti Squash Casserole


  • 1 spaghetti squash, baked
  • 1 lb. ground turkey or ground beef
  • 5-6 oz. nitrate- and preservative-free pepperoni, chopped
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 t sea salt
  • 1/2 t oregano
  • 1/2 t basil
  • 1-2 C sugar-free spaghetti sauce, depending on the size of your spaghetti squash (For a small spaghetti squash, use 1 cup. For a large spaghetti squash, use 2 cups.)
  • 2 eggs
  • 1/2-1 C shredded cheese (sharp cheddar or Romano)


  1. Preheat oven to 375 degrees.
  2. Cut spaghetti squash in half, length-wise. Remove seeds using a fork and place spaghetti squash cut sides down on baking dish. Bake spaghetti for 30-45 minutes, ensuring you do not overcook it. 
  3. Once spaghetti squash is cooked, remove squash threads using a fork, making "noodles". Set aside to cool.
  4. Preheat oven to 400 degrees.
  5. In a large skillet over medium heat, brown meat, 3/4 of the pepperoni, onion and garlic. Add seasonings and cook until done.
  6. In a large bowl, mix meat mixture, spaghetti sauce, squash, eggs and cheese. 
  7. Place into a greased 9x9 casserole dish. Top with remaining pepperoni and sprinkle a light layer of cheese.
  8. Bake for 30 minutes, or until golden and bubbly. Serve & enjoy!
