If you're looking to spice up your weekly meal plan, we're putting a whole new spin on "Taco Thursdays"! These Taco-Stuffed Zucchini boats are so delicious and easy, your family will be asking for this recipe weekly. 

Taco-Stuffed Zucchini Boats


  • 4 large zucchini
  • 1 lb. ground turkey or ground beef
  • 1-15 oz. can of black beans, drained and rinsed
  • 1/2 red onion, diced
  • 2 t cumin
  • 1 t chili powder
  • salt, to taste
  • Optional toppings: 1/2 C shredded cheddar cheese, Greek yogurt, black olives, sugar-free salsa, avocado 


  1. Preheat oven to 400 degrees, grease the bottom of a 9x13 glass baking dish and set aside. 
  2. Slice each zucchini in half lengthwise. Using a spoon, hollow out the center of each zucchini half. Place skin sides down on your baking dish.
  3. In a large skillet, brown ground turkey or beef. Add onion, cumin, chili powder and salt and mix. Add beans and continue to cook for 3-5 minutes. Remove from skillet.
  4. Spoon the filling inside of each zucchini half until they are full. Sprinkle with cheese, if using any, and bake for 25 minutes.
  5. Allow to cool for 5 minutes then top with fresh toppings. Enjoy!
